Keto is all the rage right now, as is the Instant Pot. Seriously, I think that everyone I know is eating low carb and using the Instant Pot to make their meals. I’m doing both as well! I do a medical-grade Keto as it works well with my food allergies and compromised immune system. I tend to feel a lot better on a no grain diet, plus low carb and Keto recipes are delish! I use my Instant Pot often, but a little different than most. I cook proteins like fish and roasts in the cooker, then when they are done I portion out for different meals. I then add the meat back in and saute in the veggies I want. I call the Instant Pot the One Pot Wonder!

I might be the only one that thinks this though… I don’t think it really saves you all that much time. It takes a good amount of time to heat up and then to count down the allotted cooking time. I use mine mainly to cook up my protein as I chop up my veggies and other meal prep ideas. I have used it many times to cook up entire meals for sure, but I just might be different as I don’t always do that. 😉 I asked some of my other blogger friends for their Low Carb Instant Pot Recipes and they did not disappoint!
